Yields: Around 13 cups
meat-free, dairy-free, egg-free, oil-free, soy-free
Ingredients:
- 1lb Whole Wheat Pasta
- 1 Cucumber (de-seeded & chopped)
- 1 15 oz can Beans (rinsed & drained)
- 1 15 oz can Corn (rinsed & drained)
- 1 2.25 oz can Sliced Black Olives (rinsed & drained)
- 1 Red Pepper (chopped)
- 1 cup Red Onion (chopped)
- 1 bottle Fat Free Balsamic Vinaigrette
- 1 handful fresh Oregano (diced)
- Juice from 1 Lime
Directions:
- Cook pasta according to box directions
- Combine all ingredients in a very large mixing bowl, mixing until everything is coated well with the dressing and seasonings
- Allow at least in a hour in the fridge for the flavors to blend before serving
My2Cents: I use Maple Grove Farms of Vermont dressing because it does not contain oil. Substitute fresh corn right off the cob if you can get your hands on some - two ears should do it.
