Hoff's Black Bean Mash
Yields: 4 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 2 cups Jasmin Rice
- 2 15oz. cans Black Beans (rinsed & drained)
- 1 15 oz. can Organic Corn (rinsed & drained)
- 1 cup Onion (chopped)
- 1 Red Pepper (chopped)
- 2 Zucchini/Yellow Squash (chopped)
- 2 tbsp. Nutritional Yeast
- 2 Garlic cloves
- 1 Lime
- 1 tsp. Cilantro
- 1 tsp. Cumin
- 1 tsp. Onion Powder
- 1 tsp. Garlic Powder
- Sea Salt (to taste)
Directions:
- Prepare Rice according to box directions, adding Nutritional Yeast to the cooking water
- Using a mini food processor, blend 1 can of Black Beans with juice from Lime, 1 Zucchini and Garlic until smooth - add a little water if too thick
- In a small pot over low-medium heat, heat "black bean mash"
- Meanwhile in a non-stick skillet over medium heat, brown Onions
- Add Red Peppers, 1 Zucchini, Corn & 1 can of Black Beans - brown & then cover with lid to allow veggies to steam until softened or desired texture
- Mix in Seasonings until veggies are well coated
- Plate Rice, layer on Black Bean Mash & pile high with veggies!
