Serves: 2
meat-free, dairy-free, egg-free, oil-free, soy-free
Ingredients:
- 1 1/2 cups Water + 1 cup Water
- 1 cup Jasmine Rice
- 1/2 Onion (chopped)
- 2-3 cloves of Garlic (minced)
- 1 cup Lima Beans
- 1 cup Corn
- 3 tbsp Nutritional Yeast
- Sea Salt
Directions:
- Bring 1 1/2 cups water to a boil, add Rice, 1 tbsp Nutritional Yeast & pinch of Sea Salt, reduce to simmer & cook with lid on for 15 minutes
- Meanwhile, sautee Onions & Garlic until browned & softened in a non-stick skillet
- Add 1 cup of Water, Lima Beans & Corn and simmer until heated through & water evaporates
- Add Veggie mixture to Rice, season with 2 tbsp of Nutritional Yeast & 2-3 pinches of Sea Salt
My2Cents: This is a super quick, very basic meal that I came up with when I was craving Jasmine Rice & trying to get the freezer under control.
