Hoff's Chinese Lettuce Wraps
Serves: 2 (about 6 leaves total)
meat-free, dairy-free, egg-free, oil-free
Ingredients:
- 10 oz Firm Tofu
- 1 Romaine Lettuce Heart
- 2-3 Green Onion (diced)
- 1 Garlic Clove (diced)
- 2 tbsp. Bragg Liquid Amino (soy sauce alternative)
- 2 tbsp. Pine Nuts (crushed)
- 1 8oz. can Water Chestnuts (rinsed drained, chopped)
- 1 tsp. Ginger
- Juice of 1 Lime
Directions:
- Remove water from Tofu, by pressing blocks between paper towels & heavy plates (about 20 minutes)
- Crumble Tofu and allow to marinate in Braggs & Lime Juice for a at least 20 minutes
- Toast Pine Nuts in small frying pan until golden & fragrant, remove & set aside
- Saute Shallots & Garlic until brown
- Add Tofu, Ginger, Water Chestnuts & heat through
- Mix in Pine Nuts
- Serve by allowing guests to scoop mixture into individual leaves
Hoff Thoughts: It is not imperative that you marinate the Tofu, it will just enhance the flavor. The Pine Nuts & Water Chestnuts are just to give a little crunch and texture variation - use both, use neither - go with what you like!
