Event: National Medication Disposal Day: April 28, 2012


Do you have unwanted or expired medications sitting around cluttering your space?  It's time to kick them to the curb!

If you take them to your pharmacy, they will charge a fee to dispose of them.  If you flush them down your toilet, you will contaminate the public water supply.  If you throw them away, that's a safety hazard.  If you leave them lying around, someone who shouldn't (kids) could get into them.

Instead, take advantage of the National Prescription Drug Take-Back Day sponsored by The Drug Enforcement Administration (DEA).

Cream of ... Soup

Cream of Broccoli
A super quick prep, cook and clean-up meal. The beauty of this soup is that it can be whatever you want it to be!



Cream of ... Soup
Serves: 2
meat-free, dairy-free, egg-free, oil-free


Ingredients:
  • 1 can Potatoes or Hominy (rinsed & drained)
  • 1 can Vegetables (rinsed & drained) or 2 cups Vegetables
  • 1 1/2 cups Veggie Broth
  • 1 tsp Italian Herbs
  • 1 tsp Brown Sugar
  • 1/2 tsp Bragg Liquid Aminos

Directions:
  1. Place all ingredients in a Vitamix and blend for 6 minutes
  2. If using a traditional blender, blend until smooth and then heat as usual
  3. Serve!

My2Cents: The potatoes or hominy gives this soup its creaminess.  If using frozen vegetables, run under cold water in a colander to thaw.  Try this soup with a variety of vegetable such as carrots, broccoli, cauliflower, peas, squash, etc...

than 35 years and is the first recipient of the Benjamin Spock Award for Compassion in Medicine. He received the Distinguished Alumnus Award from the Cleveland Clinic Alumni Association in 2009. Dr. Esselstyn, who summarized his pioneering research in his best-selling book, Prevent and Reverse Heart Disease, has written for more than 150 scientific publications, and has recently been featured in the film Forks Over Knives.  He and his wife, Ann Esselstyn, have followed a plant-based diet for more than 26 years. Washing & Storing Greens

I'm on the greens bandwagon because of the mega wattage of micronutrients they provide and those are really, really important. But a pain point is getting them prepped for use.  The key is to do it all at once as soon as or close to when you bring them in the door.

So, this is what I do to prep my greens:
  1. Soak cut or shredded greens in a cold water bath in your kitchen sink for 20 minutes (any dirt and debris will sink to the bottom), I like to add ground sea salt or baking soda to the water to aid in the cleaning
  2. Spin dry greens in a salad spinner
  3. Lay out a line of paper towels to accommodate the amount of greens
  4. Spread greens out for additional drying time (timing will vary)
  5. Gently roll up paper towels like a giant sushi roll, keep it lose
  6. Put "sushi roll" into a plastic zip lock bag, push out all the air and seal
  7. Place in the frig
This should give you at least 7 days with your greens - ready to go when you are!

Hoff's Black Bean Wrap

Hoff's Black Bean Wrap
Serves: 1
meat-free, dairy-free, egg-free, oil-free, soy-free
 


Ingredients:
  • 1 Whole Wheat Wrap
  • Hummus
  • Red Onion (sliced or diced)
  • Black Beans
  • Corn
  • Greens (romaine, spring mix, spinach, etc.)
  • Fresh Cilantro
  • Mustard or Salsa

Directions:
  1. Spread Hummus on Wrap
  2. Layer on Black Beans, Corn, Onion, Cilantro & Greens
  3. Add Mustard or Salsa to flavor
  4. Roll & Eat!

My2Cents: I combine one can of Black Beans & one can of Corn and store in the fridge for up to a week to have ready for these wraps.  Think of the Hummus as glue for the Black Beans & Corn to prevent their escape during rolling.  The Cilantro adds a little kick & a little extra greens to this wrap!  Um yeah, if you taste "soap," you don't like Cilantro - skip it!

Easy Trick to Drink More Water

Struggling to chug down those 64oz of water we all need daily?

Try a straw!

Drinking with a straw naturally causes you to consume more water. Partly because you can continue to breathe, allowing you to suck it up for as long as you want!  Partly because you can suck more water, than you can sip.

I put this theory to the test at work.  I always bring two glass jars full of water - about 20oz each. Typically, I only finish one, far from my goal.  When I used a straw, both waters plus my daily smoothie were polished off by the time lunch was finished!

Cooking Without Oil - Yes It Can Be Done!

Can't cook without oil?  Think again. 

One tablespoon (do you really use just one tablespoon, be honest) of oil contains 120 calories and 100% of those calories come from fat!

Contrary to popular belief, oil, even olive oil, has little nutritional value and is not an essential part of a healthy diet.  You can get all the oil your body needs from the trace amounts found in whole foods and you don't need nearly the amount you think you do.

Gnocchi

Tonight's dinner consisted of a two pot meal.

Main Contender: Mini Whole Wheat Gnocchi (cooks in about 2 minutes!) paired with a jar of Light Ragu Original Spaghetti Sauce (oil-free) that was seasoned with 3 cloves minced Garlic, Kelp (or Sea Salt) and Italian Seasoning.  To the sauce I also added one shredded zucchini and one cup of Lima Beans.

Side Helper: Toasted Sourdough with Garlic Hummus.

Hoff's Chinese Lettuce Wraps

This is a great side dish to Hoff's Chinese Broccoli Noodles!


Hoff's Chinese Lettuce Wraps
Serves: 2 (about 6 leaves total)
meat-free, dairy-free, egg-free, oil-free


Ingredients:
  • 10 oz Firm Tofu
  • 1 Romaine Lettuce Heart
  • 2-3 Green Onion (diced)
  • 1 Garlic Clove (diced)
  • 2 tbsp. Bragg Liquid Amino (soy sauce alternative)
  • 2 tbsp. Pine Nuts (crushed)
  • 1 8oz. can Water Chestnuts (rinsed drained, chopped)
  • 1 tsp. Ginger
  • Juice of 1 Lime

Directions:
  1. Remove water from Tofu, by pressing blocks between paper towels & heavy plates (about 20 minutes)
  2. Crumble Tofu and allow to marinate in Braggs & Lime Juice for a at least 20 minutes
  3. Toast Pine Nuts in small frying pan until golden & fragrant, remove & set aside
  4. Saute Shallots & Garlic until brown
  5. Add Tofu, Ginger, Water Chestnuts & heat through
  6. Mix in Pine Nuts
  7. Serve by allowing guests to scoop mixture into individual leaves


Hoff Thoughts: It is not imperative that you marinate the Tofu, it will just enhance the flavor.  The Pine Nuts & Water Chestnuts are just to give a little crunch and texture variation - use both, use neither - go with what you like!

DIY: Avocado Face Mask

If you're like me, avocados tend to get away from you & turn before you get a chance to eat them - infuriating & gut wrenching!

But it doesn't have to end that way.  Instead, give your avocado a second chance in life as a moisturizing face mask!

Courtesy of Mother Nature, avocados are a natural moisturizer.  The oil of an avocado is rich in vitamins A, D and E, all of which help maintain healthy skin.

Applying avocado to the skin is not a new concept, people have been doing it for years.  Some even rub it onto their scalp to stimulate hair grow - apply for five minutes and then rinse.

Simply separate the avocado from it's skin & mash, apply for 10-15 minutes & wash off - that's it!

This can be especially soothing if you spent a little too much time in the sun without your sunscreen.

Eat it, wear it, either way - enjoy it!

Hoff's Awesome Chocolate Ice Cream!

This recipe is AWESOME because it's so healthy & a total fake out! Don't tell, but each serving is an entire serving of fruit, because frozen bananas are the base of this recipe.  Added bonus, this comes together in under a minute!  I have not been able to stop making this "ice cream" - totally addicted!


Hoff's Awesome Chocolate Ice Cream!
Serves: 2
dairy-free, egg-free, oil-free, soy-free


Ingredients:

Directions:
  1. Combine all ingredients in a Vitamix
  2. Using the tamper, push the bananas into the blades
  3. Blend until smooth about 10-15 seconds
  4. Serve immediately for soft serve or freeze for hard serve

Blend-in Ideas (add at the very last few seconds of blending):
  • 1/2 cup Mint Leaves
  • 1/2 cup Frozen Fruit
  • 1/4 cup Junior Mints
  • 1 tbsp Chocolate Chips

My2Cents: I am AMAZED how well the frozen bananas mimic the creamy consistency of regular ice cream!  I HATE bananas, but if you pretend just a little, you can block out the banana taste and embrace the chocolate!  This may work in a regular blender, but I don't have any experience with them, so I can't say for sure - try it!  As I only use mint for this recipe, I freeze the mint in a ziplock freezer bag - works like a charm!  This dessert is so decadent, you won't even realize you just consumed a serving of fruit -crazy good!

Happy St. Patty's Day!!!

Hoff's Chinese Broccoli Noodles

Hoff's Chinese Broccoli Noodles
Serves: 2
meat-free, dairy-free, egg-free, oil-free
 

Ingredients:
  • 2 Bundles of Soba Noodles
  • 1 Head of Broccoli (chopped)
  • 1/2 Onion (chopped)
  • 2 Cloves Garlic (minced or chopped)
  • Ginger (minced or chopped)
  • Juice of 1 Clementine/Orange
  • Bragg Liquid Aminos
  • 1 tbsp Corn Starch/Kuzu Root
  • 2 tbsp Water
  • Marinated Tofu (optional)

Directions:
  1. Bring a pot of water to boil & cook Broccoli for 5 minutes
  2. Add Noodles & cook for additional 2-3 minutes or according to package
  3. Meanwhile, sautee Onions, Garlic & Ginger
  4. In a small jar combine Corn Starch & Water, shake to combine
  5. Add Juice & Aminos, shake to combine
  6. Drain Pasta and return to pot, add Onions, Garlic, Ginger & Sauce and stir until sauce thickens

My2Cents: Do not walk away from the pasta after adding the sauce, it takes maybe 2 minutes before it starts to thicken.  If you don't have a Clementine, any citrus juice will do - try Lime!  Add seasonings per your taste.  If adding the Tofu, use one brick and press out the water using a paper towel & something heavy placed on top.  Crumble Tofu and allow to marinate in Bragg Liquid Amino for about 5 minutes, saute with Onions, Garlic & Ginger.

Hoff's Chickzo

This makes a quick, simple side dish!


Hoff's Chickzo
Serves: 2
meat-free, dairy-free, egg-free, oil-free
 

Ingredients:
  • 1 cup Orzo
  • 15oz can of Chick Peas (rinsed & drained)
  • Nutritional Yeast
  • Bragg Liquid Aminos
  • Mustard

Directions:
  1. Bring a pot of water to boil
  2. Add Orzo & cook for 8-9 minutes
  3. Meanwhile, in a small jar combine Aminos & Mustard
  4. Drain & return to pot
  5. Add Chick Peas, Sauce, sprinkle with Nutritional Yeast
  6. Warm through & serve!

Dara Dubinet: Live, Love, Raw!


Despite being bogged down today with packing for an upcoming 10-day trip, prepping food for the week, exercising & finishing up class number two towards my certification in Plant-Based Nutrition - I was compelled to get my ass outside and soak up some Vitamin D courtesy of Mr. Sun!

Why?

Well not because of the unusual 60 degree March day in Ohio!

It was because of Dara Dubinet!

I can't recall how I stumbled upon Dara, but I am so happy I did!  I am addicted to her nearly daily and sometimes multiple YouTube videos, in which she simply whips something up in the kitchen or goes to the farmer's market and sometimes waxes philosophic (I love when she goes to the beach to do that - she lives in Cali!)

Dara, is a self-proclaimed raw food vegan, professional chef & healthy muse.  While, not my thing, her shining positivity & outlook on life has inspired me in many, many ways.  Watch one video & you shall be inspired too: to eat more raw foods, to hit up a farmer's market, to go outside and just be!  If a day goes by without a Dara video fix, things just aren't right! Her words linger with me and her optimism for a healthy life is infectious!

While it appears that Dara's website: Live, Love Raw is just getting off the ground, this is sure to be a great resource to have as well!

Hoff's Lasagna

Hoff's Lasagna
Yields: About 8 large servings
meat-free, dairy-free, egg-free, oil-free, soy-free
 

Ingredients:
  • 1 box Whole Wheat Lasagna Noodles (no boil)
  • 1 jar Spaghetti Sauce (Prego Light)
  • 1 - 15 oz can of Tomato Sauce
  • 1 pound Mushrooms (chopped)
  • 1 Onion (diced)
  • 1 Zucchini (shredded)
  • Fresh Spinach (or frozen)
  • 2 blocks of Firm Tofu
  • 1 can Black Beans (rinsed & drained)
  • 1/2 cup Nutritional Yeast
  • 2-3 cloves of Garlic
  • 4 tbsp Italian Herbs
  • Wheat Germ (optional)

Directions:
  1. Caramelize Onions, then add Mushrooms, cook until softened, add Garlic last to avoid burning
  2. Blend Tofu, Black Beans, Nutritional Yeast & Italian Herbs until creamy
  3. In a 9x13 baking dish, create the following layers
  4. First Layer: coat bottom of dish with Spaghetti Sauce, 1 layer of Noodles, Tofu blend & Zucchini
  5. Second Layer: 1 layer of Noodles, Onion mixture & Spinach
  6. Third Layer: 1 layer of Noodles, Spaghetti Sauce, another layer of Noodles, top with can of Tomato Sauce & sprinkle with Wheat Germ
  7. In a 350 degree oven, cover & bake for 1 hour

My2Cents: I like to use Prego Light Smart Spaghetti Sauce because there is no oil in it - saves you unnecessary fat and calories.  If you are using No-boil noodles, be generous with the sauce as they will absorb the excess liquid.  Optional: top with chopped black olives or chopped pine nuts (added with 5 minutes to go, so they brown and don't burn)!

Hoff's Guac

This recipe is super quick, because it's a dump recipe, in other words, no measuring!


Hoff's Guac
Yields: About 1 cup
dairy-free, egg-free, oil-free, soy-free


Ingredients:
  • 1 Avocado
  • Cilantro (dried or fresh)
  • Juice of 1 Lime
  • Sea Salt

Directions:
  1. Prepare the avocado by sliced around the pit, extracting the pit with the blade of your knife and squeezing it out of the skin and into a small bowl (or use a spoon if you must)
  2. Add juice of 1 Lime
  3. Add Cilantro & Sea Salt to taste
  4. Mash with potato masher (or bottom of drinking glass)
  5. Serve immediately

My2Cents: I have no idea what's in real guacamole or even what it tastes like, because outside of my recipe, I've never had it.  Frankly, I was a little afraid of the avocado and always banished it from any restaurant dish before it even got to me.  Now, I love it!  It's rich, creaminess adds depth to a dish and goes perfectly with Hoff's Black Bean TacosHoff's Quesadillas & Hoff's Taco Salad!

Incredible Disappearing Veggie!

I have been conducting a non-scientific, non-funded, non-biased experiment over the past year and I am happy to release my findings to all of you, right here, right now.

Ready?

I have found that when I shred Zucchini or it's yellow cousin and add it to a dish...it vanishes!  I don't mean it is inhaled or evaporates, it just seems to morph into it's surroundings like camouflage.

What does this mean for you?

It means that you can add another vegetable to your meal and no one will even realize it's there to scoff or object!  You will even forget it's there, I have!  And since this lo cal veg, is rich in fiber (peel), folate, potassium, Vitamin A & C, that's an added bonus!

So, try this technique with spaghetti, lasagna, soup, stew, chili...basically anything with a sauce or liquid base, which are the environments that shredded Zuc tends to fade away into...spooky!

Hoff Hit: Don't Stress, Your Hair Will Pay

A high period of stress can cause your hair to fall out!

It's not as bad as it sounds.

But, an isolated period of high pressure can cause you to shed 40% of your hair, compared to the 10% normally experienced.  This won't happen right away.  First those strands will stop growing, then go dormant and finally fall out three months later.

Ouch!

No worries, get your stress under control (meditation, yoga, music...) and your hair growth will return to normal within a few months.

Cutting Boards: Glass vs. Wood

I am a germaphobe and I am not ashamed to admit that, in fact I proclaim it to all those around!

So it was never surprising to me that I had an extreme aversion to salmonella and other  bacteria leading to food borne illnesses. See, once upon a time, The Healthy Hoff did eat meat, well chicken, turkey, etc. to be exact.  And I took extreme precautions when bringing said items into my home - always double bagging at the store, never packing with other food at the check-out, dedicating a shelf in the refrigerator and always, always using a glass cutting board for preparation!

Aside from an aversion to wood (an issue for another time), I felt that wood cutting boards were a bacteria trap!  Just by nature, cutting results in cut marks in the wood, which inevitably turns your cutting board into a salmonella breeding ground!  So, I only used glass - no crevasses for meat juices to seep into and easy to clean.  In fact, I have five of them in various sizes.

One problem, I suffered from "dull knife syndrome" or so I thought...  I would cut my produce exactly as the Food TV people did and I never had the same results!  My food would slide around, eluding my knife, flying off the cutting board.  "Knife must be dull," I always thought.  Yet sharpening never solved the problem.

Then not too long ago, I asked a professional chef, Chef Robin of Cooking with C.A.R.E. what type of cutting board she preferred.  Her reply, "wood," because it provided the best knife control.  Knife control!  Never heard of that before, now I was intrigued.  So I hit the Walmart for a cheap wooden cutting board (because I still wasn't sold on the concept), which I found for around $13 bucks.

Guess what.  I never did suffer from "dull knife syndrome."  I had "faulty knife control" due to a poor cutting surface.  Now thanks to the right cutting board, I am emulating my Food TV idols!   I am cutting onions and potatoes and peppers with ease!  My cuts are precise and my food is uniform.  I can't tell you how fantastic it is to cook when you have the proper tools.  I now look forward to all my choppy chopping!

Why was I so easy to persuade into a wooden cutting board, now?  Well, now I'm vegan, no meat in this house and no more meat juices - less chance of salmonella poisoning!  I still thoroughly wash all veggies, even the tripled washed kinds, because you can never be too careful.

Semi-Homemade Tortilla Chips

Semi-Homemade Tortilla Chips
Yields: As many as you want to make
oil-free, soy-free


Ingredients:
  • Oil-free Corn Tortillas
  • 1 Lime
  • Sea Salt

Directions:
  1. Spread out Tortillas & drizzle with Lime Juice
  2. Season Tortillas with Sea Salt
  3. Pile Tortillas into a stack
  4. Using a large knife or pizza cutter, cut Tortillas into 4 pieces to form triangles
  5. Bake at 400 degrees for 10 minutes
  6. Using a spatula, move chips around, flipping if necessary
  7. Bake at 400 degrees for 3 - 10 minutes, checking frequently to prevent burning

My2Cents: Experiment with your chip shapes, try long strips for salads, like Hoff's Taco Salad!  Experiment with seasonings, salt is the natural go to buy try cinnamon sugar for something sweet!  Don't like lime?  Use water instead.  Watch these guys, they can turn on your quickly, check often to prevent burning.  I bake on a cast iron sheet, which may accelerate my cooking time, if you're using a traditional baking sheet, you may need to flip your chips after 10 minutes and then continue cooking for another 10 minutes.
