SO GLAD someone else does potatoes this way. And they don't need to be skewered as if your life depended on it (although I think some find daggering a defenseless potato some kind of psycic release). Just a few fork-pricks through the skin (NOT halfway through the potato!) is enough. I like to rub them with a little olive oil and sprinkle with sea salt.
