So tonight I decided to use up the rest of that iceberg lettuce from my Veggie Montage. I also decided to get some short cut help from my pantry!
Main Contender: Like the night before, I layered a large dinner plate with iceberg lettuce. To that I piled on some whole wheat spaghetti. To that I layered on some canned vegan chilli, that I had enhanced with some chopped scallions, green pepper and cinnamon.
Side Helpers: What else - Garlic Bread!
My 2 Cents: Ok, it's not exactly Skyline Chili, but it's definitely healthier and a quick fix meal!
